Easy Blender Rice Balls

Ingredients

  • 2 cups cooked rice (white or brown)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 egg
  • 1/4 cup breadcrumbs
  • Oil for frying

Instruction

  1. In a blender, combine the cooked rice, grated Parmesan cheese, chopped parsley, minced garlic, salt, black pepper, and red pepper flakes (if using). Blend until the mixture is well combined and forms a thick paste.
  2. Transfer the rice mixture to a mixing bowl. Add the egg and breadcrumbs, and mix until everything is evenly incorporated.
  3. With damp hands, scoop out about 2 tablespoons of the mixture and shape it into a ball. Repeat with the remaining mixture.
  4. Heat oil in a frying pan over medium heat. Once the oil is hot, carefully add the rice balls in batches, making sure not to overcrowd the pan.
  5. Fry the rice balls for 3-4 minutes, or until they are golden brown and crispy on the outside, turning them occasionally for even cooking.
  6. Remove the rice balls from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil.
  7. Serve the rice balls hot as a delicious snack or side dish. Enjoy!
