Easy Pepperoni Pizza Casserole Recipe

Casserole pizza for a keto diet is mouthwatering and does not take much time and effort to prepare. And it has no gluten in it. I thought I would have to give up pizza when we started keto.

Luckily, we discovered this crust less pizza which we make almost once a week now and I would like to admit that we could have eaten it even more.

Some people may question if this can be called a pizza. And I don’t mind that. It is not a circular pizza but a jalapeno and cheese pizza which has all the taste of a comfortable and cheesy pepperoni pizza just without the carbs.

We have tested several types of low carb pizza bases like cauliflower pizza base, almond flour and cassava, but they don’t compare to the taste of this crustless pizza.

Ingredients

  • 8 pcs. Deli Ham (optional)
  • 16 oz Pizza sauce
  • 1 lb Ground Beef, browned
  • 2 TBS. Italian Seasoning
  • 2 tsp. Oregano
  • 4 cups Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, fresh shredded
  • 6 oz pkg Pepperoni

Directions

  • Preheat the oven to 350°F (175°C).
  • In a large cast iron skillet, cook the ground beef with Italian seasoning and oregano until browned.
  • Line a 9×12 casserole dish with slices of deli ham, overlapping them to form a crust.
  • While the beef is cooking shred the mozzarella and parmesan cheeses and set them aside.
  • Stir the pizza sauce into the browned beef and mix until well combined.
  • In the casserole dish, layer the beef mixture, cheese, and pepperoni  and repeat until all ingredients are used.
  • Finish with a layer of pepperoni on top.
  • Bake for 20 minutes or until the cheese is bubbly and melted.

    Pizza sauce has carbs, so do the other ingredients, why don’t use say to use low carb items? Very misleading
