Ingredients:
- 1 cup heavy cream (or full-fat coconut cream if you prefer dairy-free)
- 3 large egg yolks (you can save the whites for other recipes)
- 2 tbsp butter (optional for extra richness)
- 1 tsp vanilla extract (optional, if you’re okay with a tiny bit of plant-based ingredients)
- Pinch of salt
- Sweetener of choice (like stevia, erythritol, or monk fruit), to taste
Instructions:
- Heat the Cream: In a saucepan, gently heat the heavy cream over low-medium heat. You want it warm but not boiling, about 160-170°F (70-75°C).
- Whisk the Egg Yolks: In a separate bowl, whisk together the egg yolks and sweetener until the mixture is smooth and slightly lightened in color.
- Temper the Eggs: Gradually pour a little bit of the warm cream into the egg yolk mixture while whisking constantly. This helps to gently raise the temperature of the eggs without scrambling them. Continue adding the cream slowly until you’ve combined all of it.
- Cook the Custard: Pour the entire egg and cream mixture back into the saucepan over medium-low heat. Stir constantly with a wooden spoon or whisk.
