Quick sourdough discard pizza dough that you can make with your eyes closed! This sourdough pizza dough is so simple and there’s lots of ways you can make it fit exactly what you need.

You can easily use sourdough discard for this recipes, but it works just as well with an active, bubbly starter. I’ve explained how to decide what to use further down.

You’ll also discover that this delicious quick sourdough pizza dough is really easy to freeze. You’ll never need to order pizza in again.

Ingredients:

For the Pizza Dough:

  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon olive oil

For the Pizza Toppings:

  • 1/2 cup pizza sauce or marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Your choice of toppings (e.g., pepperoni, sliced bell peppers, onions, mushrooms, olives)

Instructions:
Prepare Pizza Dough:

    • In a mixing bowl, combine the sourdough discard, all-purpose flour, salt, and baking powder. Mix until a dough forms.
    • Knead the dough on a lightly floured surface for 2-3 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.
    • Shape the dough into a ball and place it back in the mixing bowl. Cover with a clean kitchen towel and let it rest at room temperature for 30 minutes.

Preheat Oven:

  • Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to preheat as well.

Roll Out Dough:

  • After the dough has rested, transfer it to a lightly floured surface. Use a rolling pin to roll out the dough into a circle or rectangle, about 1/4 inch thick.

Prepare Pizza:

  • Transfer the rolled-out dough to a parchment-lined baking sheet or a pizza peel if using a pizza stone.
  • Spread the pizza sauce or marinara sauce evenly over the dough, leaving a small border around the edges.
  • Sprinkle the shredded mozzarella cheese evenly over the sauce.
  • Arrange your choice of toppings over the cheese.

Bake Pizza:

  • Carefully transfer the assembled pizza to the preheated oven. If using a baking sheet, place it directly on the oven rack. If using a pizza stone, slide the pizza onto the hot stone in the oven.
  • Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
