INGREDIENTS
- 1 pound ground beef
- 1 medium onion diced
- 1/2 cup red bell pepper diced
- 1/2 cup green bell pepper diced
- 1 cup peeled and diced potatoes
- 1 can 15 oz diced tomatoes, with juice
- 1 can 15 oz sweet corn, drained
- 1 can 15 oz pinto beans, drained
- 1 can 8 oz tomato sauce
- 3 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon cumin
- Chopped parsley or cilantro for garnish
INSTRUCTIONS
- In a large pot or Dutch oven, brown the ground beef over medium-high heat until cooked through. Drain any excess fat.
- Add the diced onion, red and green bell peppers to the pot with the beef. Cook until the vegetables are softened, about 5 minutes.
- Add the diced potatoes, sweet corn, diced tomatoes with their juice, and tomato sauce. Mix well.
- Pour in the beef broth and bring the mixture to a boil.
- Reduce heat to a simmer, add the chili powder, garlic salt, smoked paprika, cumin and Cajun seasoning. Stir to combine.
- Cover and simmer for about 20 minutes, or until the potatoes are tender.
- Taste and adjust the seasoning if necessary.
- Serve the cowboy soup hot, garnished with chopped cilantro or parsley.
NOTES
Cowboy soup gets even tastier if you let it hang out in the fridge overnight. The flavors have a chance to mix and mingle, making it even more delicious the next day!
