Tuscan Soup Recipe

Tuscan soup with spicy sausages, potatoes, and spinach.

This Soup is a super quick and simple copycat recipe with rich, creamy flavor you can’t resist.

Well, I maybe not. Sure, there’s something to be said for the going-out-to-eat experience overall. And the not cooking thing.

Ingredients

  • 3 (3.5 ounce) links spicy Italian sausage, casings removed
  • 1 onion, chopped
  • 6 cups chicken broth
  • 3 large potatoes, cubed
  • 1 bunch fresh spinach, washed and chopped
  • ¼ cup evaporated milk
  • salt and ground black pepper to taste

Directions

  1. Place sausage and onion into a large stockpot over medium heat. Break sausage up with a spoon and cook until onion is translucent and sausage is browned and crumbly, 7 to 8 minutes. Drain if desired.
  2. Add chicken broth and potatoes; bring to a boil. Reduce the heat to medium-low and simmer until potatoes are tender, 10 to 15 minutes. Stir in spinach and cook until wilted, 1 to 2 minutes.
  3. Remove from the heat and stir in evaporated milk. Taste and season with salt and pepper as needed.
